PECORINO CALCAGNO PEPATO is made from pasteurized sheep’s milk with the addition of black peppercorns and left to age for at least 7 months. When it reaches maturity, the most beautiful cheeses are selected and divided into four blocks, then vacuum-packaged. They are than labelled pursuant to the regulations in force.
